At the heart of our trailer sits something you won't find anywhere else on Chincoteague Island: Big Bertha. A custom-built, wood-fired brick oven engineered specifically for Cosa Pizza. Built from the ground up and always sitting at a crisp 700 degrees, this one-of-a-kind hearth is the engine behind every pie we sling.
How the Science Works:
True Neapolitan-style baking is a high-speed physics and chemistry equation happening all at once, driven by three distinct forms of heat transfer:
~Intense Radiant Heat - The arched dome absorbs and radiates extreme heat downward, caramelizing the toppings, melting the fresh mozzarella, and cooking the exposed edges of the dough in under 90 seconds.
~Convection - As the wood fire burns, superheated air circulates rapidly across the dome chamber, sweeping heat over the top of the pie to blister and char the crust to leopard spotted perfection.
~Conduction - The thick stone floor acts as a massive thermal battery. When the stretched dough hits the deck, direct conduction instantly bakes the base, driving moisture out of the flour starches to create that signature crisp exterior with an airy, tender chew.
It's high-heat thermodynamics meeting total mobility-bringing unmatched wood-fired flavor directly to the streets of the island.
